Because I like the sour, spicy and sweet taste of Thai dishes, I often make my own creations. Like flour fried fish with this Thai sauce blend.

Material:
500 g fillet red snapper or dori
1 teaspoon grated ginger
2 tsp grated garlic
3 tablespoons of lime juice
1 tablespoon of Thai fish sauce
1 teaspoon salt
Flour Layer:
200 g of flour
2 tablespoons rice flour
1 teaspoon ground pepper
1 teaspoon salt
250-300 ml of water

Sauce:
50 g sugar
50 cooked vinegar
2 tablespoons of coarse ground chili
250 ml of water
2 cloves of finely chopped garlic
1 tablespoon tomato sauce
1 tablespoon cornstarch, stir with a little water

How to make
• Slice the fish into 1/2 cm thick pieces about 4 x 4 cm in size.
• Stir the fish slices with ginger, onions, orange juice, fish sauce, and salt until they are even. Leave it for about 30 minutes - 1 hour.
• Coatings:
• Stir all the dry ingredients together then pour water and keep stirring until it becomes a thick enough mixture.
• Dip each piece of fish in a flour mixture until it is wrapped evenly.
• Fry in hot oil and lots of it until the fish becomes dry and yellowish then lift and let stand until the oil is drained.
• Sauce:
• Mix all ingredients together in a saucepan, except cornstarch.
• Heat until it boils and then pours the cornstarch solution.
• Cook until it boils and thick then lift and chill.
• Serve fried fish with Thai Sauce and a sprinkling of cilantro.
